Since we “pear’d” oatmeal and pear together for an Oatmeal Pear Smoothie last time I figured we’d go a new direction.
Pumpkin spice is literally everywhere during autumn. Everything from breads and coffee to pies and cookies sends people in a frenzy during this season! It was a no brainer that I would need to find a healthy way to indulge in this season staple.
This is not your typical super sweet pumpkin spice latte. Just the right balance of sweet and spice makes this smoothie an extra healthy, zesty and enjoyable treat on a crisp, cool, autumn day. Best part is that it’s vegan! No dairy required!
What you’ll need:
2 1/4 cup pumpkin puree (canned or fresh)
1 tablespoon raw pumpkin seeds
1/2 ground cloves
1/4 vanilla extract (substitute with 1/4 low fat vanilla yogurt for non-vegan version)
1 tablespoon agave maple syrup
1/4 cup almond milk
A dash of cinnamon
Combine all the ingredients in a blender. Be sure to blend thoroughly or else you’ll wind up with a very grainy mixture. I use a Vitamix blender and blend for about 2.5 minutes. Pour into a glass/mason jar and sprinkle a few raw pumpkin seeds on top. I ran out of raw pumpkin seed so I used the seeds from the pumpkin I cut open and puréed for this smoothie. Also, if you’re going to purée a fresh pumpkin be sure to cut open and remove gooey stuff and seeds first. Next, boil for 15-20 minutes or until tender.
Raw pumpkin seeds are a great source of protein, fiber and zinc! Ladies, you definitely want to incorporate raw pumpkin seed into your diet. The amount of zinc that these little seeds pack in 1/4 cup serving can help boost the health of your skin, hair, and nails amongst many other health benefits over time.
