Spicy Vegan Tacos – 10 Minute Recipe

Once you become vegan you are almost forced to become creative with your meal ideas. As much as I love quinoa, I was itching to try something different.

Here’s a quick vegan taco recipe that will leave your taste buds and tantalized in 10 minutes or less!

What you’ll need:

Veggie Crumbles.

1/4 cup of chopped mixed peppers.

1/4 cup of red onion.

1/4 cup of scallion (green onion).

Garlic.

Sea salt.

Hot sauce of choice.

Salsa (optional).

Trader Joe’s Multi-Grain Tortilla Wrap.

Coconut oil spray.

Directions:

  • Lightly spray a non stick skillet with coconut oil and bring to medium heat.
  • Add veggie crumbles and stir.
  • As crumbles start to soften over heat, season with garlic and a pinch of sea salt for taste.
  • Add mixed peppers, onions and hot sauce of choice. Continue to mix for an additional 4-6 minutes.

There you have it! A tasty vegan meal in 10 minutes or less! Serve with a side of lemon and some tasty blue corn chips and you’re good to go! I don’t make these with veggie crumbles often since they are soy based. Consumption of too much soy can have many negative effects on the body. Just like anything else, moderation is key.
