I am absolutely obsessed with Minimalist Baker’s blog and recipes! What I love is that all of her recipes are simple & require 10 ingredients or less to make.
This is a blog to check out especially if your always on the go or have a very hectic & packed schedule. Between my full time job, motherhood, pregnancy, trying to maintain a fitness regimen and blogging, I find my schedule allows me very little time to cook for myself daily. Minimalist Baker’s recipes allow me to prep healthy and delicious vegan meals that last me about 3 or more days at a time.
My favorite recipe this week from Minimalist Baker is her Gingery Thai Kale Salad with Ginger Dressing. This salad is the perfect light meal for those hot summer months yet filling enough to keep your appetite satisfied. The good for you ingredients include: ginger, kale, green beans, red pepper, cashews, sesame seeds, and carrots.
