Vegan Blueberry Muffin Smoothie

Alas! A healthy way to enjoy a blueberry muffin without the guilt!

I have a major sweet tooth and kind of an obsessive relationship with blueberry muffins. I decided to take my love of blueberry muffins, rolled oats and OJ to create this delicious and healthy smoothie.

This smoothie is packed with protein, antioxidants and plenty of fiber to keep hunger at bay and aid in weight management or weight loss. I enjoyed one batch with 2 slices of whole grain toast w/almond butter. I had a second serving for a mid afternoon pick me up. It tasted like the perfect guilt free treat! You can top with extra blueberries, chia seeds or both for extra flare.

Here is my plant-based twist on a blueberry muffin that is both refreshing and loaded with all types of nutrients to power you through a long and busy day. Bottom line: If you love blueberry muffins you need to make this smoothie.

Instructions
  1. Add all ingredients to a blender. Pulse until smooth, adding more orange juice if needed to thin out the smoothie. Serve immediately, garnished with extra blueberries and chia seeds if desired.
