What are your 5 must haves for indoors during the winter months? Netflix, a warm shower, ginger tea, and a hot bowl of soup are my faves. Banana muffins or vegan chocolate chip cookies with a mean glass of almond milk wouldn’t be too bad either!..lol. There’s just something about a hot bowl of soup on a cold winter day that’s always a winner in my book.
I love hearty, bold, rich and zesty flavor in my soups to warm my heart & soul. Red lentil soup is my favorite because of how hearty and delicious it can be with very little ingredients. It’s affordable, very easy to make and extremely healthy!
The blend of herbs and spices aren’t the only tasty thing about this soup. The ginger and potatoes make this lentil soup much more zesty and filling than expected.
One thing I changed to make this red lentil soup heartier is that I added half the batch to my Vitamix blender. This allowed the broth to have a thicker texture while leaving more room to taste the delicious veggies that were added. Let me know if you try this recipe out!
