I remember smelling the yumminess all day in the classroom, anxiously watching the clock, waiting to inhale a piece of heaven. Here’s the good for you breakdown:

Dates: Nature’s caramel. Sweet and rich while providing energy through vitamins & minerals like zinc, potassium, magnesium, and iron!

Almond Butter: extra protein boost and full of vitamin E, manganese, and biotin.

Walnuts: excellent source of protein and high in omega 3 fatty acids.

Cacao Powder: rich chocolate flavor as well as phytonutrients, magnesium, and iron. Phytonutrients combat free radicals in your body & help you to absorb key vitamins.

Hemp Seeds: add a boost of omega-3 and omega-6 fatty acids, iron, magnesium, and zinc. They’re also the perfect complete protein since they contain all 20 amino acids, including the 9 essential amino acids.

These vegan energy bites are fudgy, moist, super healthy, full of protein and extremely easy to make! You can enjoy this healthy dessert with tea or as an afternoon pick me up. I just love having the option versus traditional empty calorie sweets that provide no nutritional value.

  1. Add dates to a food processor and pulse/mix until small bites remain or a ball forms. Scoop out and set aside.
  2. Add walnuts to the food processor and pulse into a fine meal. Then add cacao powder, hemp seeds and sea salt. Pulse a few more times to combine. (Make sure you don't overmix or the walnuts will turn into butter.)
  3. Add the dates back in along with the almond butter and melted coconut oil (optional). Mix/pulse to combine. The result should be a moist dough-like mixture. If too wet, add a bit more cacao powder or hemp seeds. If too dry add more almond or seed butter.
  4. Refrigerate for 10 minutes. Then scoop out rounded tablespoon amounts (I like this scoop) and carefully form into balls. I used my hands and had no problem forming the balls. The dough will be somewhat fragile, so use the warmth of your hands to gently form/roll them into balls. There should be about 20 energy bites total.
  5. OPTIONAL: Roll in extra hemp seeds or cacao powder. I rolled in cacao which gave the energy bites more of a chocolatey taste and richness. If you don't want that richness then you can stick with the hemp seeds.
  6. Sprinkle with hemp seeds and you're good to go!
