The Best Vegan Chocolate Chip Cookies

After reading through and trying hundreds of vegan chocolate chip cookie recipes I decided to give this one a whirl. I tweaked a couple of the ingredients to my liking and the results were AMAZING! I finally had homemade vegan chocolate chip cookies that taste good! Vegan chocolate chip cookiesMy husband who is a non-vegan and doesn’t really care for sweets even loved them. This recipe is super easy because it only uses 8 ingredients and took less than 10 minutes to make. I also had most of the ingredients in my pantry beforehand. A couple of quick notes and tips:

  • I couldn’t believe how hard it was to find baking powder. I literally went to every grocery and food specialty store and kept coming up with baking soda. Three weeks later on a grocery run at Trader Joe’s I finally found baking powder. It’s also aluminum free so this was a plus! Have you ever bit into a muffin or cookie that had a bitter or “tin” like taste? If so, more than likely a baking powder that contained aluminum was used. Aluminum free baking powder will improve the taste of your baked goods substantially when used.
  • If you don’t care for the taste coconut (in this case coconut oil), use extra virgin olive oil instead. The olive oil will not leave an aftertaste after baking. I made two batches of these delicious vegan chocolate chip cookies: 1 with coconut oil and 1 with olive oil. Both taste amazing. Keep in mind, the coconut oil taste does wear off the next day.
  • Please be sure to flatten the cookie dough before baking. I read a couple of reviews stating that cookies did not flatten. If you don’t flatten before baking they will not flatten on their own. Just don’t make them as flat as a pancake or else you’ll end up with a cookie pie instead..lol.
  • If you want your cookies to come out a bit softer than my original batch just add a smidgen more almond milk after combining all your ingredients. Just be careful not to add too much almond milk. You’ll end up a batch of these vegan cookies that will be liquidy instead of solid.

    Batch in which I did not use additional almond milk. They were thick in width but super moist once we bit into them. Pure decadence!

Instructions
  1. Pre-heat oven to 350 degrees.
  2. Thoroughly mix together the coconut oil & brown sugar, then add the almond milk & vanilla. The mixture may be really "liquidy" this is OK.
  3. In a separate bowl mix the flour, baking soda and baking powder.
  4. Combine the wet & dry ingredients. NOTE: it WILL be crumbly at first - this is OK). Add in vegan chocolate chips & any other mix-ins of your choosing. I used semi-sweet chocolate chips from "Enjoy Life".
  5. Roll into tablespoon sized balls & place them on a sheet of parchment paper or ungreased cookie sheet. Then flatten them out a bit with your palm. The dough will look like Pillsbury cookie dough but it won't have the same exact texture. It actually may be a little crumbly but once you smoosh it together it'll work out just fine!
  6. Bake for 7-10 minutes. I baked for 9 minutes which was perfect. (Please note, bake times may vary based on oven).
