Thanksgiving is literally days away and Christmas is just around the corner which means baking season has commenced! Over the next few weeks, I’m going to be sharing some extremely easy vegan recipes that require 10 ingredients or less. These recipes will also have your vegan and non-vegan dinner guests asking for more!
As a vegan for the last 3 years, I’ve learned how to bake from both scratch but also turn any box mix into a vegan dessert through substitution. So for the lazy vegan or non-vegan here’s a recipe that will require only 4 items: 1 box of Trader Joe’s Banana Bread Mix, 1 cup of organic applesauce, 1/4 cup of rolled oats and cinnamon. You can add 2-3 extra ripe bananas if you want extra banana flavor. UPDATE: I recently added chia seeds and flaxseed meal for an additional fiber boost and it came out amazing! I couldn’t believe how quick and easy it was to make these muffins! My husband who is not a fan of sweets and is also non-vegan literally devoured them. He was kept asking every 5 minutes “are they ready yet?”..lol. These super moist vegan muffins are also extremely filling so you don’t have to worry about over indulging. I ate half a muffin and was stuffed. Try pairing this delicious treat with a hot cup of tea, your favorite throw and a side of movie or hulu and you’ll be in heaven!..lol. I threw in rolled oats from Trader Joe’s for extra fiber and cinnamon for an extra kick. The applesauce is used as a substitution to eggs. Applesauce binds together extremely well when baking. It also adds a bit of sweetness while giving just the right hint of moistness to just about any dish. The mix yielded 4 pretty decent sized bomb tasting muffins. I added a bit of flour (1 tbsp) to make these muffins high altitude. I’ve made them smaller in the past and have gotten 6 out of this same mix. So it’s really up to you as far as the size and quantity of muffins you’d like to make. You could also use a bread pan to make this dessert into a tasty vegan banana cinnamon oat bread instead.
