Vegan Banana Cinnamon Oat Muffins

Thanksgiving is literally days away and Christmas is just around the corner which means baking season has commenced! Over the next few weeks, I’m going to be sharing some extremely easy vegan recipes that require 10 ingredients or less. These recipes will also have your vegan and non-vegan dinner guests asking for more!

As a vegan for the last 3 years, I’ve learned how to bake from both scratch but also turn any box mix into a vegan dessert through substitution. So for the lazy vegan or non-vegan here’s a recipe that will require only 4 items: 1 box of Trader Joe’s Banana Bread Mix, 1 pouch if organic applesauce, 1/4 cup of rolled oats and cinnamon. You can add 2-3 extra ripe bananas if you want. I couldn’t believe how quick and easy it was to make these muffins! My husband who is not a fan of sweets and is also non-vegan literally devoured them. He was kept asking every 5 minutes “are they ready yet?”..lol. These super moist vegan muffins are also extremely filling so you don’t have to worry about over indulging. I ate half a muffin and was stuffed. The applesauce is used as a substitution to eggs. Applesauce binds together extremely well when baking. I added a bit of flour (1 tbsp) to make these muffins high altitude. I’ve made them smaller in the past and have gotten 6 out of this same mix. So it’s really up to you as far as the size and quantity of muffins you’d like to make. You could also use a bread pan to make this dessert into a tasty vegan banana cinnamon oat bread instead.
