Happy Super Bowl Sunday Y’all! Before we start, I have a confession. I don’t know the first thing about football..lol. Whether you’re rooting for the Falcons or Patriots, this is a vegan chili recipe that everyone will enjoy!

While I was working out yesterday all I could think about was having an insanely delicious and filling post workout lunch. You can serve this vegan chili over rice or eat it solo. I had it for breakfast this morning. Trust me when I say it tastes delicious either way! I knew this recipe was a winner when my carnivore husband couldn’t stop going back for seconds and thirds! Pair your bowl of chili heaven with your favorite brew & you’re good to go. I wash my chili down with Kombucha since I’m not a fan of beer. Kevita is one of my favorite brands because it’s priced cheaper than most Kombucha brands and it’s extremely potent.

Ingredients

Instructions
  1. Heat a large pot with the oil over medium high heat.
  2. Add the sweet potato and onion and cook for about 5 minutes, until the onion if softened.
  3. Add the garlic, chili powder, chipotle, cumin and salt and stir to combine.
  4. Add the stock, tomatoes, pepper sauce, black beans and quinoa and bring the mixture to a boil. Stir everything to combine.
  5. Add nutritional yeast flakes and stir one last time. Cover the pot and reduce the heat to maintain a gentle simmer.
  6. Cook for 30-40 minutes until the quinoa is fully cooked and the sweet potatoes are soft and the entire mixture is slightly thick like a chili.
  7. Add the lime juice and remove the pot from the heat. Season with salt as needed.
