Happy Super Bowl Sunday Y’all! Before we start, I have a confession. I don’t know the first thing about football..lol. Whether you’re rooting for the Falcons or Patriots, this is a vegan chili recipe that everyone will enjoy!
While I was working out yesterday all I could think about was having an insanely delicious and filling post workout lunch. I usually go for avocado and toast but I’ve been eyeing this vegan black bean chili recipe off Pinterest for about a week.
I already had all but one of the ingredients in my pantry (veggie stock). I scooped the vegetable stock from the grocery store and got straight to work!
This vegan chili recipe is full of protein, fiber, spice, flavor and comfort on a ridiculously cold day. It makes for a yummy post workout meal. Since chili and Super Bowl are a match made in heaven, it makes for the perfect dish for your game day party. It’s extremely easy to make & you can cook big batches for game day or leftovers for 2-3 days. You can serve this vegan chili over rice or eat it solo. I had it for breakfast this morning. Trust me when I say it tastes delicious either way! I knew this recipe was a winner when my carnivore husband couldn’t stop going back for seconds and thirds! The best part is that you can enjoy this rich and hearty vegan chili in less than 45 minutes!
Pair your bowl of chili heaven with your favorite brew & you’re good to go. I wash my chili down with Kombucha since I’m not a fan of beer. Kevita is one of my favorite brands because it’s priced cheaper than most Kombucha brands and it’s extremely potent.
