Vegan Stuffed Sweet Potato Boats
  1. Preheat the oven to 350 degrees.
  2. Wash all potatoes.
  3. Cut each sweet potato in half end-to-end across the top.
  4. Rub each potato with a thin layer of avocado oil and sprinkle with garlic & pink Himalayan salt.
  5. Place on baking pan/sheet.
  6. Bake 45-60 minutes, or until you can pierce them easily with a knife.
  7. Fluff the inside with a fork before stuffing with your favorite toppings.
  1. Prepare quinoa as usual but add bell peppers, onion and garlic while cooking it. Add dash of pink Himalayan salt to taste. You can try adding a Jamaican hot pepper like I do to spice things up.
  1. Canned beans: simmer with avocado or olive oil, 1 bay leaf, garlic, onion, pepper, oregano, tomato sauce, salt and black pepper. If using fresh beans: Sort, rinse and cook accordingly. Lazy hack: Try adding Better Bean Co’s Roasted Chipotle Red Bean Dip.
